Ingredients

  • 2 kiwis, cut into cubes
  • 0.5 pineapple, cut into cubes
  • 1 banana, cut in half and then into 1-cm-thick slices
  • 5 tbsp. bee balm (Monarda) syrup
  • 4 egg yolk
  • 1 dl water

Instructions

  • Place all the fruits in a bowl, add 2 1/2 tbsp of syrup, mix and divide the fruits into glasses. In a thin-sided bowl, combine the rest of the syrup, the egg yolks, and the water. Suspend the bowl over the simmering bain marie, it must not touch the water. Using the whisk attachment on a hand mixer, beat for approx. 6 mins. until the sabayon is frothy and traces form when it is stirred. Remove the bowl, continue beating for a moment, pour into the glasses, serve immediately.
