  • 1 roast pork (Tessinerbraten), ca. 800 g
  • Barbecue grilling
  • 2 tbsp. maple syrup
  • Apple Mustard Sauce
  • 300 g crème fraîche
  • 3 tbsp. coarse-grain mustard
  • 1 sour apples, cut into small cubes
  • 0.5 bunch chervil, finely chopped
  • salt and pepper to taste

    Remove the meat from the fridge approx. 1 hr. prior to grilling.
  • Barbecue grilling

    Charcoal/gas/electric barbecue: Cover and grill the meat over/on a low heat (approx. 150°C) for approx. 1¼ hrs. (core temperature approx. 70°C), turning occasionally. Brush with the maple syrup approx. 10 mins. before the end of the cooking time. Remove the meat from the grill, cover and leave to rest for approx. 5 mins.
  • Apple Mustard Sauce

    Combine the crème fraîche and mustard, stir in the apple and chervil, season. Carve the meat, serve with the sauce.
