  • Roasted berries
  • 0.5 lemons, use only the juice
  • 2 pinches bourbon vanilla powder
  • 10 preserved pink peppercorns rinsed, drained, crushed
  • 0.5 cm ginger, finely grated
  • 2 tbsp coconut palm sugar
  • 300 g strawberries, halved
  • To serve
  • 2 tsp pistachios
  • some preserved pink peppercorns, rinsed, drained
  • 2 tbsp coconut milk yoghurt

  • Roasted berries

    In a bowl, mix the ginger with all the other ingredients up to and including the pepper. Add the strawberries, mix, spread on a baking tray lined with baking paper. Roast for approx. 20 mins. in the centre of an oven preheated to 180°C.
  • To serve

    Serve the berries while still warm, decorate with the yoghurt, pistachios and pepper.
