Ingredients

  • Muffins
  • 600 g waxy potatoes, cooked in their skins, day-old, coarsely grated
  • 3 eggs
  • 150 g tangy Gruyère, coarsely grated
  • 0.75 tsp salt
  • a little pepper
  • 12 slices bacon strips
  • Utensils
  • One muffin tin with 12 holes (each approx. 7 cm in diameter), filled with muffin cases or greased

Instructions

  • Muffins

    Mix together the potatoes, eggs and cheese, season. Transfer the potato mixture to the prepared muffin tin.
  • Roll up the rashers of bacon and place on top of each muffin.
  • To bake

    Approx. 25 mins. in the centre of an oven preheated to 220°C. Remove, allow to cool slightly on a rack, remove from the tin.
  • Serve with:

    Lamb's lettuce
