Rolled Salmon Bites

  • 1 tbsp. mild mustard
  • 2 tbsp. liquid honey
  • 1 tbsp. condimento bianco
  • 2 tbsp. dill, finely chopped
  • a little pepper
  • 2 pinches salt
  • 1 organic lemon, use grated zest, 2 tsp of juice
  • 75 g plain organic cream cheese
  • 200 g smoked salmon cut into slices, cut in half if necessary
  • 100 g cucumber, cut into 5-cm-long sticks
  • a little rucola (rocket)
  • 20 toothpicks

  • Mix together the mustard and the remaining ingredients with the dill and season. Place 1 tbsp of the mixture in a deep bowl. Set aside the remainder.
  • Combine the cream cheese, lemon zest and lemon juice and season. Coat the salmon with the mixture. Add the cucumber sticks to the marinade in the bowl and mix. Place 1 cucumber stick with a little rocket on each strip of salmon, roll up and fix in place with a toothpick. Drizzle the remaining honey & mustard sauce over the salmon rolls.
