Säuliamt Bratwurst with Bacon Rösti

  • 1 kg waxy potatoes, e.g. Charlotte
  • 0.75 salt
  • 2 tbsp. clarified butter
  • 100 g smoked bacon
  • 4 farmer’s bratwurst, e.g. pork, veal
  • peanut oil to fry

  • In a large pan, bring to the boil approx. 500 ml of water. Add the potatoes and cook, half-covered, over a medium heat until almost soft (between 25-50 minutes, depending on size). Remove, leave to cool. Peel the potatoes, grate and season with salt. Cut the bacon into small cubes. Heat 1 tbsp of clarified butter in a non-stick frying pan. Add the diced bacon and briefly fry. Then add the potatoes and fry for 5 minutes, turning occasionally. Using a spatula, shape into a cake and continue cooking over an almost medium heat. Either toss the Rösti into the air with a flick of the wrist (so that, if possible, they land on the unbrowned side in the pan) or turn using a pan lid or a round plate. Cook the second side. Melt the remaining butter all around the edge of the Rösti. Serve on a warm plate.
  • Fry the sausages in a non-stick frying pan in oil, turning frequently, for approx. 15 mins. over a low heat. Serve with the Rösti.
