  • Salmon tartare
  • 300 g smoked salmon, cut into slices, finely diced
  • 2 shallot, finely chopped
  • 1 tbsp capers, roughly chopped
  • 2 tbsp lime juice
  • 2 tbsp dry white vermouth
  • 0.5 bunch dill, finely chopped
  • pepper, to taste
  • Apple salad
  • 1 tbsp white balsamic vinegar
  • 1 tbsp rapeseed oil
  • 2 red-skinned apple, halved, cores removed, cut into slices
  • salt and pepper to taste
  • 20 g hazelnuts, toasted, coarsely chopped

  • Salmon tartare

    Carefully mix together all of the ingredients, refrigerate until ready to serve.
  • Apple salad

    Mix the apple slices immediately with the balsamic and oil, season. To serve, plate up the tartare and apple salad, sprinkle with the hazelnuts, garnish with dill as desired.
