  • 100 g butter
  • 3 egg yolk
  • 1 tbsp. sugar
  • 100 g frozen chestnut puree, defrosted, cut into pieces
  • 1 tbsp. Maizena cornflour
  • 2 tsp. Lebkuchen spice
  • 1 tsp. cardamom pod
  • 100 g dried fruits (e.g. apricots, dates, plums), cut into small cubes
  • 3 egg white
  • 1 tbsp. icing sugar
  • 1 pinch salt
  • 100 g Dessert Extrafin

  • Beat the butter, sugar and egg yolks with the whisk on a hand mixer for approx. 2 mins. Add the chestnut puree, cornflour and spices and briefly continue to beat. Beat the egg whites with the salt until stiff, add the sugar, continue beating until the mixture turns glossy. Alternately add 3/4 of the dried fruits and the egg whites to the egg yolk mixture. Divide the mixture into the prepared moulds and individually cover them with foil. Transfer the moulds to a cloth in an oven-proof dish.
  • Cook in a bain-marie: pour in boiling water to 2/3 the height of the moulds. Cook the puddings for approx. 40 mins. in the lower half of an oven preheated to 180°C. Remove the moulds and allow the puddings to cool.
  • Combine the Dessert Extrafin and the icing sugar.
