Sausage Stew with Vegetables and Apples

  • 3 raw pork bratwurst, cut diagonally into 1.5-cm-thick pieces
  • 250 g carrots, cut diagonally into slices
  • 250 g Küttiger carrots, cut diagonally into slices
  • 1.5 tbsp. white flour
  • 1 dl water
  • 1 dl apple wine
  • 0.5 tsp. anise
  • a little ground cloves
  • 2 apples (e.g. Gala), cut into eighths
  • 0.5 tsp. salt
  • a little pepper
  • 1 onion, cut into thin segments

  • Fry the sausage pieces in a frying pan in batches, without any oil, for approx. 3 mins. per batch until crispy, wiping out the fat released with kitchen paper in-between each batch. Remove the sausage pieces. Sauté the onion and carrots in the same pan for approx. 5 mins., remove. Toast the flour, stirring constantly, in the same pan for approx. 5 mins. until hazelnut brown. Pour in the water and apple cider, stirring constantly, bring to the boil. Reduce the heat, season with aniseed and clove powder. Return the vegetables to the pan, cover and simmer over a low heat for approx. 15 mins., add the sausage and apple pieces, simmer for approx. 10 mins. until cooked, season.
