Sautéed Mushrooms with a Splash of Red Wine

Ingredients

  • 3 tbsp. olive oil
  • 1 onion, cut in half and then into thin slices
  • 450 g mixed mushrooms, e.g. king oyster, oyster and button, cut into pieces
  • 0.5 dl red wine
  • 0.5 dl vegetable bouillon
  • salt and pepper to taste
  • 50 g rucola (rocket)
  • 150 g soft cheese (e.g. Naturaplan organic Le Moelleux)

Instructions

  • Heat the oil, stir fry the onions and mushrooms for approx. 5 mins., add the wine, reduce completely. Pour in the stock, stir in half the rocket and half the cheese, divide onto warmed plates. Top with the remaining rocket and cheese.
