  • 2 tbsp. lime juice
  • 1 red chilli pepper, insides removed, finely chopped
  • 2 avocado, cut into thin slices
  • 0.5 charentais melon (approx. 400 g), cut into thin slices
  • 2 tbsp. fish sauce
  • 0.5 bunch coriander, finely chopped
  • 1 spring onions, incl. green parts, onion finely chopped, greens cut into thin rings
  • 1 tsp. sugar
  • clarified butter to fry
  • 12 scallops without roe (MSC)


  • Mix together the lime juice and remaining ingredients with the coriander, season. Mix the melon and avocado with the sauce, cover and leave to steep for approx. 15 mins.
  • Heat the clarified butter in a non-stick frying pan. Fry the mussels for approx. 2 mins. on each side. Remove the pan from the heat, drizzle the fish sauce over the mussels.
