  • 2 clove of garlic, cut into thin slices
  • 1 tsp. paprika
  • 3 tbsp. olive oil
  • 0.5 tsp. salt
  • 3 tbsp. herbal wine vinegar
  • 0.5 bunch peppermint, finely chopped
  • 2 organic gilthead seabream (approx. 400 g each), ready to cook
  • 0.5 shallot, finely chopped
  • 1 tsp. sugar
  • a little pepper
  • 0.5 cucumber, cut into small cubes
  • 1 avocado, cut into small cubes


  • Mix the garlic and remaining ingredients including the salt. Rinse the seam break (inside and out) in cold water, pat dry and transfer to an oven tray lined with baking paper. Coat the fish inside and out with the garlic oil.
  • Bake for approx. 25 mins. in the centre of an oven preheated to 180°C.
  • In a bowl, thoroughly combine the vinegar and remaining ingredients with a little pepper. Add the diced cucumber and avocado, mix.
  • Serve the sea bream with the cucumber & avocado mix.
