Ingredients

  • Fish
  • 2 tbsp. olive oil
  • 1 tsp. paprika
  • 2 garlic cloves, cut into thin slices
  • 0.5 tsp. salt
  • 2 organic gilthead seabream (approx. 400 g each), ready to cook
  • Vegetable Mix
  • 3 tbsp. herbal wine vinegar
  • 3 tbsp. olive oil
  • 0.5 shallot, finely chopped
  • 0.5 bunch peppermint, finely chopped
  • 1 tsp. sugar
  • 0.5 tsp. salt
  • a little pepper
  • 0.5 cucumber, cut into small cubes
  • 1 avocado, cut into small cubes

Instructions

  • Fish

    Mix the garlic and remaining ingredients including the salt. Rinse the seam break (inside and out) in cold water, pat dry and transfer to an oven tray lined with baking paper. Coat the fish inside and out with the garlic oil. Bake for approx. 25 mins. in the centre of an oven preheated to 180°C.
  • Vegetable Mix

    In a bowl, thoroughly combine the vinegar and remaining ingredients with a little pepper. Add the diced cucumber and avocado, mix. Serve the sea bream with the cucumber & avocado mix.
