  • 350 g white grapes cut in half, pips removed if necessary
  • 2 tbsp. lemon juice
  • 4 tbsp. elderflower syrup
  • 250 g lactose-free low-fat quark
  • 200 g lactose-free mascarpone
  • 1 organic lemon, use half of grated zest and 1 tbsp of juice
  • 1.5 dl laktosefreier Vollrahm, whipped until stiff
  • 150 g gluten-free biscuits (e.g. Hoops), coarsely chopped

  • Mix the grapes, 2 tablespoons of elderberry syrup and lemon juice, cover and chill. Stir together the quark, mascarpone, lemon zest and juice and 4 tablespoons of elderberry syrup. Fold in the whipped cream carefully using a rubber spatula. Distribute half the sponge fingers across the bottom of the prepared tin. Top with half the grapes and half their liquid, then spread half the quark mixture on the grapes and smooth it. Repeat. Cover and leave to set in the refrigerator for approx. 4 hours. Before serving, freeze for approx. 1 hour.
