Ingredients

  • 3.5 dl milk
  • 0.5 vanilla pod, längs aufgeschnitten, Samen ausgekratzt
  • 1 pinch salt
  • 50 g durum wheat semolina
  • 2 tbsp. sugar
  • 1 organic lemons, 0.5 abgeriebene Schale
  • 1 dl cream, steif geschlagen
  • Utensils
  • Für 4 Förmchen von je ca. 1 dl, kalt ausgespült

Instructions

  • Köpfli

    Bring the milk to the boil in a pan with the salt and vanilla. Stir in the semolina, simmer for approx. 5 mins. over a very low heat, stirring continuously to form a thick paste. Remove the pan from the heat, cover and allow to absorb for approx. 10 mins. Remove the vanilla pods. Stir in the sugar, whipped cream and lemon zest. Spoon the mixture into the prepared moulds, level off and allow to cool. Cover the semolina puddings and leave to chill for approx. 3 hours.
  • Servieren:

    Griessköpfli mit spitzem Messer vom Förmchenrand lösen, auf Dessertteller stürzen. Apfelkompott dazu servieren.
