Semolina Blancmanges with Warm Apple Compote

  • 3.5 dl milk
  • 1 pinch salt
  • 0.5 Vanilla pod, cut open lengthways, cut open lengthways, seeds scraped out
  • 50 g durum wheat semolina
  • 2 tbsp. sugar
  • 1 dl cream, whipped until stiff
  • 1 Organic lemon, a little grated zest and 1/2 tbsp of juice, use half of grated zest
  • 400 g apples, cut into thin slices
  • 2 tbsp. lemon juice
  • 0.5 tbsp. butter
  • 4 tbsp. sea buckthorn (spread)
  • 2 tbsp. Water


  • Bring the milk to the boil in a pan with the salt and vanilla. Stir in the semolina, simmer for approx. 5 mins. over a very low heat, stirring continuously to form a thick paste. Remove the pan from the heat, cover and allow to absorb for approx. 10 mins. Remove the vanilla pods. Stir in the sugar, whipped cream and lemon zest. Spoon the mixture into the prepared moulds, level off and allow to cool. Cover the semolina puddings and leave to chill for approx. 3 hours.
  • Drizzle the apple slices with lemon juice. Heat up the butter in a pan. Sauté the apple slices. Distribute the sea buckthorn over the fruits, drizzle with some water and carefully mix. Cover and simmer gently for approx. 5 mins. Remove, allow to cool a little in a bowl.
