  • 350 g noodles (z.B. Spaghetti)
  • saltwater, boiling
  • 4 tbsp. olive oil
  • 1 charentais melon, cut into small cubes
  • 1 cucumber (z.B. Nostrano), halbiert, in Streifen
  • 0.5 bunch peppermint, coarsely chopped
  • 1 Organic lemon, a little grated zest and 1/2 tbsp of juice, use grated zest and juice
  • 1 red chilli pepper, insides removed, cut into rings
  • 4 tbsp. grated Parmesan
  • 1 tsp. salt
  • a little pepper
  • 1 bag Mozzarella-Perlen (ca. 120 g), abgetropft
  • a little cress


  • Cook the pasta in salted water until al dente, drain, rinse under cold water and mix with the oil.
  • Combine the melon and cucumber with the pasta. Puree the mint and remaining ingredients with a little pepper. Mix the sauce with the pasta, scatter over the mozzarella and garnish with cress.
