  • Chicken
  • 0.5 tsp salt
  • 2 chicken breasts (approx. 160 g each), halved crosswise
  • a little pepper
  • a little olive oil
  • Dressing
  • 1 tbsp hot chilli sauce Sriracha
  • 100 g orange jam
  • 2 tbsp ketchup
  • 2 tbsp water
  • 0.25 tsp salt

  • Chicken

    Season the chicken. Heat the oil in a frying pan and fry the chicken for about 2 mins. on each side, remove.
  • Dressing

    Put the marmalade, Sriracha, ketchup and water into the same pan, bring to the boil, season with salt. Return the chicken to the pan and heat gently.
  • Tip:

    Put ¼ tsp of dried, ground ginger into the sauce and scatter over a few freshly-picked coriander leaves.
