Stir-fried mushrooms with a dash of red wine
Ingredients
- 3 tbsp olive oil
- 1 onions, halved, thinly sliced
- 0.5 dl red wine
- 450 g mixed mushrooms, e.g. Herb fritters, oyster mushrooms and mushrooms, in pieces
- 0.5 dl vegetable bouillon
- salt and pepper to taste
- 50 g rocket
- 150 g soft cheese (e.g. Naturaplan organic Le Moelleux)

Instructions
- Heat the oil, stir fry the onions and mushrooms for approx. 5 mins., add the wine, reduce completely. Pour in the stock, stir in half of the rocket and cheese, serve on warmed plates. Top with the remaining rocket and cheese.
