  • 3 tbsp olive oil
  • 1 onions, halved, thinly sliced
  • 0.5 dl red wine
  • 450 g mixed mushrooms, e.g. Herb fritters, oyster mushrooms and mushrooms, in pieces
  • 0.5 dl vegetable bouillon
  • salt and pepper to taste
  • 50 g rocket
  • 150 g soft cheese (e.g. Naturaplan organic Le Moelleux)

  • Heat the oil, stir fry the onions and mushrooms for approx. 5 mins., add the wine, reduce completely. Pour in the stock, stir in half of the rocket and cheese, serve on warmed plates. Top with the remaining rocket and cheese.
  • Serve with:

    Roasted veal loin and pasta.
