  • 1 tbsp. sugar
  • 500 g strawberries, cut into pieces
  • 1 tbsp. Water
  • 1 tbsp. thyme leaves, finely chopped
  • 4 sprig thyme

  • Bring the sugar and strawberries to the boil with the water, simmer for approx. 10 mins., puree, then add the thyme. Freeze the sorbet mixture for about an hour. Remove the bowl, vigorously beat the sorbet with a whisk attachment. Repeat this step 3 times after each additional hour, to form an evenly frozen sorbet. Then remove the sorbet, beat until smooth with the whisk attachment on a hand mixer, freeze for about another 30 mins. In a wide-bottomed pan, bring the sugar, water and thyme sprigs to the boil without stirring. Reduce the heat and simmer, shaking the pan occasionally, until a hazel caramel has formed. Leave the thyme to cool on a sheet of baking paper. Shape the sorbet into balls and decorate with the thyme.
