  • 4 tbsp. sugar
  • 1 tbsp. red port
  • 100 g strawberries
  • 1 tsp. lemon juice
  • 250 g low-fat quark
  • 250 g mascarpone
  • 1.5 dl full cream
  • 150 g sponge fingers
  • 1 tbsp. cocoa powder


  • Puree the strawberries with the sugar, port and lemon juice, cover, and chill.
  • Stir the quark together with the mascarpone, sugar and port. Whip the cream until stiff, fold in.
  • Distribute half the sponge fingers in a rectangular tin (approx. 1 liter). Pour half the strawberries over the sponge fingers, spread half the quark mixture over the strawberries, lay the remaining sponge fingers on the quark mixture and repeat the strawberry and quark layers. Cover and chill for approx. 2 hours. Shortly before serving, decorate with strawberries and dust with cocoa powder.
