Ingredients

  • Ginger and apricot syrup
  • 100 g cane sugar
  • 1 dl water
  • 2 tsp ginger, finely chopped
  • 1 lime, rinsed with hot water, dabbed dry, grated zest, juice set aside
  • 150 g apricots, cut into pieces
  • Summer drink
  • 0.25 cucumber, cut into slices
  • ice cubes
  • 1.25 dl dry white vermouth (e.g. Martini bianco)
  • 4 apricots, cut into slices
  • 3 dl mineral water
  • Utensils
  • 4 glasses (each approx. 200 ml)

Instructions

  • Ginger and apricot syrup

    Bring the water and sugar to the boil in a pan. Add the ginger, lime zest and apricots, simmer for approx. 5 mins., leave to cool in the pan, pass the mixture through a sieve to create a thickish syrup.
  • Summer drink

    Place the ice cubes and cucumber in the glasses. Pour the syrup, reserved lime juice, vermouth and mineral water into the glasses, garnish with the apricots.
