Summer spätzli
Ingredients
- Roasted tomatoes
- 300 g different coloured cherry tomatoes
- 1 tbsp olive oil
- 1 garlic clove, sliced
- 0.5 tsp sugar
- 0.5 tsp salt

- Spätzli
- 0.5 tbsp olive oil
- 300 g spätzle egg noodles
- 150 g burrata
- 0.5 bunch basil, finely chopped
- a little pepper
- 0.5 tsp salt

Instructions

Roasted tomatoes
Mix the tomatoes with all the other ingredients up to and including the pepper, spread onto a baking tray lined with baking paper. Bake for approx. 15 mins. in the centre of an oven preheated to 200°C. -
Spätzli
Heat the oil in a frying pan, stir fry the spätzli for approx. 5 mins. Serve roasted tomatoes and burrata with the spätzli, sprinkle with basil, season.
