Ingredients

  • 200 g fine whole-grain rolled oats
  • 2 carrots, finely grated
  • 60 g dried apricots (sweet), finely chopped
  • 40 g hazelnuts, coarsely chopped
  • 3 tbsp linseed
  • 4 tbsp liquid honey
  • 2 tbsp dried aronia berries
  • 0.25 tsp salt
  • 1.5 tbsp rapeseed oil

  • One loaf tin (approx. 30 cm), lined with baking paper

    In a bowl, mix the carrots with all the remaining ingredients. Knead well by hand until the ingredients have combined to form a compact mass. Transfer the mixture to the prepared tin and smooth down.
  • To bake

    Approx. 40 mins. in the centre of an oven preheated to 160°C. Turn the heat up to 180°C and bake for a further 10 mins. Remove from the oven, leave to cool in the tin, cut into 10 bars.
  • Shelf life:

    Store in an airtight container for approx. 1 week.
