Ingredients

  • Soup
  • 1 tbsp. butter
  • 1 garlic cloves, in Scheiben
  • 1 onion, in feinen Streifen
  • 500 g sweet potatoes, in ca. 1 cm grossen Würfeln
  • 1 pears, in ca. 1 cm grossen Würfeln
  • 1 tbsp. curry powder
  • 1 litre vegetable bouillon
  • 2 dl single cream for sauces
  • salt and pepper to taste
  • Crispy Bites
  • 2 tbsp. butter
  • 50 g dried apricots, in Streifen
  • 100 g sandwich bread, in Würfeli
  • 2 tbsp. flat-leaf parsley, fein geschnitten

Instructions

  • Soup

    Melt the butter in a pan. Sauté the onion, garlic, sweet potato and pear for approximately 2 minutes. Add the curry, pour in the stock, cook the soup over medium heat for 15 minutes. Blend the soup, pour the single sauce cream and adjust the seasoning with salt and pepper.
  • Crispy Bites

    Melt more butter in a pan. Add the bread and apricots and brown for 2 minutes, add the parsley. Serve the soup and spread the crispy apricot bites over the soup.
