Ingredients

  • 0.75 litre milk
  • 20 g butter
  • 1 bag vanilla sugar
  • 1 pinch salt
  • 150 g durum wheat semolina
  • 2 egg yolk
  • 3 tbsp. sugar
  • 1 Organic lemon, a little grated zest and 1/2 tbsp of juice, use grated zest and 1 tbsp of juice
  • 2 egg white
  • 1 dl cream
  • 100 g sliced almonds

Instructions

  • Bring the milk to the boil in a pan with the butter, vanilla sugar and salt. Stir in the semolina, simmer for approx. 5 mins. over a low heat, stirring continuously to form a thick paste. Remove the pan from the heat, let the mixture cool a little. Stir in the sugar, egg yolks and lemon zest and juice. Beat the egg whites with salt until stiff. Add the sugar and continue beating for a moment. Fold the egg whites into the cooled semolina paste. Using a wide spatula, spread the paste out into a rectangle approx. 1 1/2 cm thick on an oven tray lined with baking paper.
  • Bring the cream to the boil in a pan with the sugar and flaked almonds. Spread the almonds over the semolina mixture.
  • Bake in the centre of an oven preheated to 200°C for approx. 25 mins. Remove, allow to cool a little, cut into pieces.
