Sweet Wine Zabaione with Brutti e Buoni Biscuits

  • 0.5 tbsp. sugar
  • 1 dl sweet red wine (e.g. Recioto) (e.g. Recioto)
  • 1 fresh egg yolks
  • 6 Brutti e Buoni (Mandelgebäck)

  • In a thin-sided bowl, beat together the sugar and egg yolk using the whisk attachment on a hand mixer, until the mixture turns paler in colour. Add the dessert wine, suspend the bowl over the gently simmering bain marie (ensuring it does not touch the water) and stir for approx. 8 mins. until the Zabaione turns frothy and traces form when stirring. Remove the bowl and briefly continue stirring. Divide the Zabaione into 2 glasses. Top the the Zabaione with the cake.
