Ingredients

  • 1 red chilli, cut into rings
  • 1 tin corn kernels (ca. 140 g), abgetropft
  • 3 tbsp. flat-leaf parsley, finely chopped
  • 4 chicken breasts (je ca. 150 g), längs je eine Tasche eingeschnitten
  • 1 tsp. salt
  • a little pepper
  • 1 tbsp. clarified butter

Instructions

  • To make the filling, mix the sweetcorn with the parley and chilli.
  • Season the chicken breasts, fill each one with ¼ of the filling, then close the openings and secure with toothpicks. Heat the clarified butter in a wide-bottomed non-stick frying pan, brown the chicken breasts over a medium heat for approx. 10 mins. all around.
