  • 125 g sugar
  • 2 tbsp. lemon juice
  • 3 apples (approx. 430 g), cut into segments
  • 1 pinch salt
  • 2 eggs
  • 125 g butter, soft
  • 1 organic lemons, use grated zest and 2 tbsp of juice
  • 150 g white flour
  • 1 tsp. baking powder
  • 0.5 dl single cream
  • icing sugar to dust

  • Combine the sugar with the lemon juice, dip the apple slices in it, cover and steep for approx. 15 mins. Beat the butter and sugar with the whisk attachment on a hand mixer for approx. 3 mins. Add the eggs one at a time and continue to mix until the mixture is lighter in colour, season with salt. Stir in the lemon zest and juice. Mix the flour and baking powder and briefly stir in, with the cream. Divide the dough mixture into the prepared moulds. Top with the apple slices and press down lightly. Bake for approx. 25 mins. in the centre of an oven preheated to 180°C. Remove from the oven, cool on a cooling rack. Dust the Thurgau apple tarts with icing sugar shortly before serving.
