  • 2 dl Water
  • 5 dl coconut milk
  • 1.5 tsp. ginger, fein gerieben
  • 1 stick lemongrass, längs halbiert
  • 3 kaffir lime leaves
  • 1 tbsp. lime juice
  • 0.5 tbsp. sugar
  • a little salt
  • 200 g natural tofu, in Würfel
  • 1 red chili, entkernt, in feinen Ringen
  • some basil leaves

  • Bring the coconut milk, water, galanga, lemon grass and Kaffir lime leaves to the boil in a pan, cover and simmer for approx. 5 mins., stirring occasionally. Season with lime juice, sugar and a little salt. Remove the galanga, Kaffir lime leaves and lemon grass, reduce the heat. Add the tofu, steep for approx. 5 mins., divide the soup into bowls, garnish with chilli oil, serve.
