  • 2 dl water
  • 5 dl coconut milk
  • 1.5 tsp ginger, finely grated
  • 1 stick lemongrass, halved lengthwise
  • 3 kaffir lime leaves (Thai-Kit)
  • 1 tbsp lime juice
  • 0.5 tbsp sugar
  • a little salt
  • 200 g tofu, plain, cut into cubes
  • 1 red chilli, deseeded, cut into thin rings
  • some basil leaves

  • Bring the coconut milk, water, ginger, lemongrass and Kaffir lime leaves to the boil in a pan, cover and simmer for approx. 5 mins., stirring occasionally. Season with the lime juice, sugar and a little salt. Remove the Kaffir lime leaves and lemongrass, reduce the heat. Add the tofu, steep for approx. 5 mins., divide the soup into bowls, garnish with chilli, serve.
