Tom Kha Tofu (Thai coconut soup)
Ingredients
- 2 dl water
- 5 dl coconut milk
- 1.5 tsp ginger, finely grated
- 1 stick lemongrass, halved lengthwise
- 3 kaffir lime leaves
- 1 tbsp lime juice
- 0.5 tbsp sugar
- a little salt
- 200 g tofu, plain, cut into cubes
- 1 red chilli, deseeded, cut into thin rings
- some basil leaves

Instructions
- Bring the coconut milk, water, ginger, lemongrass and Kaffir lime leaves to the boil in a pan, cover and simmer for approx. 5 mins., stirring occasionally. Season with the lime juice, sugar and a little salt. Remove the Kaffir lime leaves and lemongrass, reduce the heat. Add the tofu, steep for approx. 5 mins., divide the soup into bowls, garnish with chilli, serve.
