  • 1 onion, cut into strips
  • 1 tbsp. olive oil
  • 1 garlic cloves, cut into slices
  • 5 dl vegetable bouillon
  • 800 g tomatoes, cut into pieces
  • 2 tbsp. tomato paste
  • Meatballs
  • 80 g green olives
  • 300 g ground beef and pork
  • 50 g ground almonds
  • 2 tbsp. flat-leaf parsley, coarsely chopped
  • 0.75 tsp. salt
  • a little pepper
  • olive oil to fry
  • Presentation
  • 50 g crème fraîche

  • Soup

    Öl in einer Pfanne warm werden lassen. Zwiebel und Knoblauch ca. 1 Min. andämpfen. Tomatenpüree und Tomaten beigeben, Bouillon dazugiessen, zugedeckt ca. 12 Min. köcheln, pürieren.
  • Meatballs

    Fleisch und alle Zutaten bis und mit Pfeffer in eine Schüssel geben. Masse gut kneten, zu 16 Kugeln formen. Wenig Öl in einer Bratpfanne heiss werden lassen. Meatballs portionenweise rundum ca. 5 Min. braten.
  • Presentation

    Suppe anrichten, Crème fraîche darauf verteilen, Meatballs dazu servieren.
