Trout on a Bed of Kohlrabi

  • 1 kg kohlrabi, cut into segments
  • 2 clove of garlic, cut into thin slices
  • 0.5 tsp. salt
  • 4 organic trout (je ca. 250 g)"
  • 2 tbsp. olive oil
  • 3 spring onions, incl. green parts, cut in half lengthways and then into pieces
  • 100 g black olives
  • 1 organic lemon, abgerieben Schale und Saft
  • 50 g rucola (rocket), coarsely chopped

  • Mix the kohlrabi, garlic, oil and salt in a bowl, spread onto an oven tray lined with baking paper.
  • Bake for approx. 20 mins. in the lower half of an oven preheated to 220°C. Remove from the oven, turn the heat down to 200°C.
  • Rinse the trout (inside and out) in cold water, pat dry. Drizzle the oil over the fish, season with salt. Turn the vegetables over, sprinkle with the onions and place the fish on top.
  • Time in oven: approx. 20 mins.
  • Stir together the olives, the lemon zest and juice, and the oil and salt, then stir in the rocket. Spread over the fish.
