  • 1 tbsp sesame oil
  • 3 passion fruit, flesh removed
  • 1 spring onions incl. green parts, finely chopped
  • 1 lime, rinsed with hot water, dabbed dry, use grated zest only, keep a little to one side
  • 2 tsp soy sauce
  • Tartare
  • 125 g wakame salad, 1/2 finely chopped
  • 300 g yellowfin tuna (sushi quality), diced finely

  • Sauce

    Mix the passion fruit flesh with the oil, soy sauce, spring onion and lime zest.
  • Tartare

    Mix the tuna and finely chopped wakame seaweed with the sauce. Serve on plates. Garnish with the rest of the wakame, scatter over the remaining lime zest.
