Valentine Scones

  • 200 g frozen berry mixture
  • 2 tbsp. sugar
  • 0.5 tbsp. lemon juice
  • 70 g butter, cut into pieces, cold
  • 300 g white flour
  • 2 tsp. baking powder
  • 0.5 tsp. salt
  • a little milk

  • Simmer the berries, sugar and lemon juice over a medium heat for approx. 10 mins, allow to cool.
  • Mix the flour, sugar, baking powder and salt in a bowl. Add the butter and, using your hands, rub together to form an evenly crumbly mixture. Pour in the milk and quickly combine to form a soft dough, do not knead.
  • Roll out the dough to a thickness of approx. 1 1/2 cm. Using a cutter (approx. 5 cm diameter) cut out around 12 hearts and place on an oven tray lined with baking paper, coat with milk.
  • Bake for approx. 20 mins. in the centre of an oven preheated to 200°C.
  • Remove the Valentine scones, allow to cool a little on a cooling rack, serve just warm or cold with the jam.
