  • Speedy Jam:
  • 200 g frozen berry mixture
  • 100 g sugar
  • 0.5 tbsp. lemon juice
  • Scones
  • 300 g white flour
  • 2 tbsp. sugar
  • 0.5 tsp. salt
  • 70 g butter, cut into pieces, cold
  • 2 tsp. baking powder
  • a little milk

  • Speedy Jam:

    Simmer the berries, sugar and lemon juice over a medium heat for approx. 10 mins, allow to cool.
  • Scones

    Mix the flour, sugar, baking powder and salt in a bowl. Add the butter and, using your hands, rub together to form an evenly crumbly mixture. Add the milk and quickly combine to form a soft dough, do not knead. Roll out the dough to a thickness of approx. 1 1/2 cm. Using a heart shaped cookie cutter (approx. 5 cm diameter) cut out about 12 hearts and place on an oven tray lined with baking paper, coat with milk. Bake for approx. 20 mins. in the centre of an oven preheated to 200°C. Remove the Valentine scones, allow to cool a little on a cooling rack, serve just warm or cold with the jam.
  • Conserving:

    The jam can be kept for up to 4 days in an air-tight container in the refrigerator.
