  • 250 g green asparagus
  • 100 g veal sausage meat
  • a little pepper ground
  • 8 thin veal cutlets
  • 0.25 tsp salt
  • 8 slices cured ham
  • some toothpicks
  • clarified butter for frying
  • 1 dl dry white wine
  • 1 dl full cream
  • 3 sprigs thyme
  • salt and pepper to taste
  • 1 pinch sugar

  • Cut off the bottom third of each stalk of asparagus, and slice or plane the remainder lengthwise into thin strips. Spread out the cutlets, season them, spread a thin layer of sausage on them, and place the ham and asparagus in the middle. Roll up the cutlets and secure with toothpicks.
  • Heat the clarified butter in a frying pan and sear the roulades on all sides for 3-4 mins. Pour in the wine and cream, add the thyme. Simmer over a medium heat for 12-15 mins., turning frequently.
  • Remove, keep warm on a plate. Reduce the sauce, season it, and serve it with the meat.
