Ingredients

  • Batter
  • 100 g chickpea flour
  • 0.5 tsp salt
  • 0.5 tsp baking powder
  • 2 tbsp rolled oats
  • 0.5 bunch parsley, finely chopped
  • 0.5 tsp turmeric
  • 2 dl water
  • a little pepper
  • Frittata
  • 1 tbsp olive oil
  • 1 spring onions incl. green parts, onion finely chopped, green part cut into rings
  • 2 leaves Swiss chard, stem diced, leaves cut into strips
  • Tomatoes
  • 100 g cherry tomatoes, halved
  • 0.25 bunch parsley, finely chopped
  • 1 tbsp balsamic vinegar
  • 0.25 tsp salt

Instructions

  • Batter

    In a bowl, mix the flour with all the other ingredients up to and including the pepper. Pour in the water, mix well. Cover and set aside.
  • Frittata

    Heat the oil in a frying pan, sauté the onion and Swiss chard stems. Add the Swiss chard leaves and onion greens, continue to cook until the leaves begin to wilt. Pour the batter over the vegetables. Cover and leave to solidify over a low heat for approx. 20 mins.
  • Tomatoes

    Mix the tomatoes with the balsamic and parsley, season with salt. Arrange the tomatoes on top of the frittata.
