Ingredients

  • Berries
  • 4 tbsp dried aronia berries
  • 4 tbsp dried blackcurrants
  • 1 dl water, hot
  • Bowl
  • 0.25 g cucumber, diced
  • 4 pitted dates
  • 100 g courgettes, diced
  • 50 g frozen chopped spinach
  • 3 tbsp whole-grain rolled oats
  • 2 dl coconut milk
  • 0.25 tsp salt
  • 2 tsp mixed seeds
  • a little pepper (e.g. Exotic Mix)

Instructions

  • Berries

    Place the berries in a bowl, pour over the water and leave to soak for approx. 30 mins.
  • Bowl

    Put half the berries to one side, and add the rest to the blender jug with the water used for soaking. Add the courgettes and the remaining ingredients up to and including the pepper. Blend. Divide between two bowls, and sprinkle the remaining berries and the seed mix on top.
  • Tip:

    You could use quinoa pops or berry flakes as the topping instead.
