Watermelon granitaBring 200 ml of the reserved watermelon juice to the boil along with the sugar and thyme, reduce the heat, simmer for approx. 2 mins. Pour the juice through a sieve and into the remaining watermelon juice, mix and pour into the reserved watermelon skins. Cover and freeze for approx. 15 hrs., scrape the mixture 3-4 times with a fork until frozen.
