Yoghurt Cream with Grapes and Cashews

  • 2 tbsp. icing sugar
  • 50 g cashews
  • 200 g blue grapes, cut in half
  • 180 g plain yoghurt
  • 0.5 dl water
  • 2 dl full cream, whipped until stiff

  • Mix the sugar, water and nuts in a pan, bring to the boil, stirring constantly, reduce the heat, simmer for approx. 5 mins., occasionally shaking the pan, until the nuts are hazelnut brown. Arrange the nuts on a sheet of baking paper, leave to cool, break into pieces.
  • Mix the grapes and icing sugar, cover and steep for approx. 30 mins.
  • Stir together the yoghurt and icing sugar, fold in the whipped cream.
  • Divide 3/4 of the grapes into bowls, top with the crème and decorate with the remaining grapes and cashew nuts.
