Ingredients

  • Cauliflower
  • 1 cauliflower (approx. 600 g), cut into florets
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 1 tbsp Za'atar (spice mix)
  • Za'atar cauliflower
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 5 Medjool dates, cut into thin strips
  • 2 tbsp flat-leaf parsley, finely chopped
  • 0.25 tsp salt
  • 3 tbsp pomegranate seeds

Instructions

  • Cauliflower

    Mix the cauliflower, oil, za'atar and salt in a bowl and transfer to an oven tray lined with baking paper.
  • Za'atar cauliflower

    Mix the cauliflower with the lemon juice and the remaining ingredients, serve while still warm.
