- 1 cauliflower (approx. 600 g), cut into florets
- 2 tbsp olive oil
- 0.5 tsp salt
- 1 tbsp Za'atar
- Za'atar cauliflower
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 5 Medjool dates, cut into thin strips
- 2 tbsp flat-leaf parsley, finely chopped
- 0.25 tsp salt
- 3 tbsp pomegranate seeds

Cauliflower
Mix the cauliflower, oil, za'atar and salt in a bowl and transfer to an oven tray lined with baking paper. -
Za'atar cauliflower
Mix the cauliflower with the lemon juice and the remaining ingredients, serve while still warm.
