Comments: Gottardo is produced in the show dairy in Airolo. This mountain cheese is aged naturally, i.e. it is stored and left to ripen in a suitable climate (moisture and temperature) in the Saint-Gotthard Massif without any additional treatment. As a result of the ageing process, Gottardo has a characteristic aroma that sets it apart from other cheeses. The pleasant, relatively soft texture and aromatic flavour make Gottardo a very popular cheese for consumers of all ages and for all occasions.
