The flesh of the mackerel is brownish-red, tangy and succulent. As a smoked fish, it has a particularly pronounced smoky flavour. Its fat content varies depending on the season, from around three percent in spring to an incredible 30 percent in the autumn. Due to the high percentage of Omega 3 fatty acids, which keep the heart and circulation in good shape, the fat of the mackerel is considered to be very healthy.

I was very pleased with the two whole mackerel I purchased. They were super fresh, beautiful to look at, with clean, clear eyes. I froze them, and upon defrosting, they had retained their freshness. I scored the flesh then, then dusted them with salt, pepper, and ground coriander. sautéed them whole in olive oil, With rosemary sprigs and garlic, and they were delicious!
War etwas unsicher, da ich Fisch lieber an der Theke kaufe, wo ich ihn sehen kann. Die Makrelen waren aber superfrisch und kein bisschen tranig.
