Marsala is a dessert wine named after the Sicilian town from which it originates. It is produced according to a method extremely reminiscent of the process applied to similar specialities (port, Madeira, sherry). After being harvested, ripened grapes are used to make wine in a process that prevents any contact between the must and the skins. The resultant wine is transferred to vats holding up to 3 to 4 hectolitres each. These vats are only filled up to two-thirds of their capacity.
The Marsala is then aged according to the "Solera" method, i.e. barrels of wine are set in a vertical system. Part of a barrel's content (approximately one-third) is fed into the barrel directly below. The wines of different vintages are consequently blended, thus ensuring a consistent product. 375ml. 17%vol.
