Osborne is produced according to a method that has been passed on from generation to generation. Firstly, selected white Airén grapes are harvested at optimum ripeness and then crushed. The must is vinified via a normal fermentation process. The resultant wine is carefully distilled and aged according to the Solera method in American oak barrels holding around 600 litres each that were previously used to make Oloroso sherry.
The Solera method is as follows: A small quantity is emptied from the barrel lying on the ground (the solera) and filled into bottles. The cask from which the brandy has been taken is refilled from the next cask up, which in turn is refilled with from the barrel above it. This procedure repeats itself up to the highest barrel, into which new, freshly distilled brandy is then added. One year of ageing in oak barrels. Appearance: colour ranging from mahogany to amber, glistening bright and clear. Nose: winey, soft, balanced, plum notes. Palate: soft, persistent, pleasant. 36% Vol. 70 cl.
