Special notes

Barón de Chirel Verdejo is a wine made from 100% Verdejo grapes, from vineyards dating back to before the phylloxera plague, located in Aldeanueva del Codonal and Aldehuela in the province of Segovia. They are planted on granite and sandy soil at 850-900 metres above sea level, and are picked by hand in 20 kg boxes. In the winery they pass through a dual selection table for the grapes and for the berries. Only the free run juice is used in the traditional winemaking process. Matured for six months in 300 and 600-litre French oak barrels and in vats with a capacity of 3,000 litres, where the wine rests on its lees. The yeasts are stirred three times a week.
