Degustation notes

Straw yellow colour, intense aromas of walnuts, flor yeast, quince and green apple, concentrated on the palate, dry, mild acidity, very long and aromatic finish.

Special notes

Tío Pepe is the most famous Fino Sherry. The quality is excellent. Fino is a dry sherry, which must be stored for at least two years under a layer of yeast called a 'pile'. The pile gives the Fino its characteristic aroma of green walnuts and apple. Sherry is native to the Spanish town of Jerez de la Frontera, which also gave its name to sherry. The soil and climate here in the south of Andalusia meet all the requirements for this wine to thrive: calcareous soil reflects the sun's rays in summer and stores the rain like a sponge in winter. The area under cultivation includes the lands within the municipalities of Jerez de la Frontera, El Puerto de Santa Maria, Sanlúcar de Barrameda, Chipiona, Trebujena, Rota, Puerto Real and Chiclana de la Frontera, as well as certain parts of land (pagos) of Lebrija. The Jerez - Xérès - Sherry and Manzanilla-Sanlúcar de Barrameda designations of origin are protected. The climate corresponds to that of a warm, southern zone with a strong influence of the Atlantic Ocean. On average, 290 cloudless sunny days with intensive brightness are counted per year. The west wind provides the vines with sea humidity, which acts as a mitigating factor in the dry summer months. Rain falls mainly from October to May. September is usually a dry month, a favourable factor for the ripeness and health of the grapes. The soil is dominated by white soil, the Albariza (alba means white in Latin). The Albariza rock is a white, organic chalk marl rich in calcium carbonate, clay and silicon. The Albariza has a high moisture retention capacity and stores the rainwater of the winter months to feed the vines during the dry season.

    Ein exzellenter Sherry für Marinade und vor allen Saucen. Ein unentbehrlicher Helfer in der Küche für feine Speisen. Er schmeckt auch gut zum Trinken, so ist es angebracht, eine Flasche auf Vorrat zu haben.
